WEST CHESTER, PA — Chester County Health Department inspectors cited a Chester Springs restaurant for multiple food safety violations this week, including improper food cooling, inadequate hot water, and temperature-control failures that resulted in the disposal of several potentially hazardous food items.
The violations were documented during a May 22 inspection at Revival Pizza Pub in Chester Springs, according to inspection reports released by the Chester County Health Department.
Inspectors reported that cooked chicken, shaved steak, and chicken wings were not cooled from 135°F to 41°F within the required six-hour window. The food was observed more than 12 hours after preparation at temperatures between 42°F and 47°F and was discarded onsite.
Additional temperature-control violations included cut lettuce, cooked eggs, bleu cheese, and house-made dressings being held between 45°F and 49°F rather than at or below the required 41°F threshold. Inspectors said those items were also discarded.
The report also cited the restaurant’s hot water system for failing to produce sufficient hot water at restroom handwashing sinks. Inspectors recorded water temperatures of 68°F in the women’s restroom and 65°F in the men’s restroom, below the required minimum.
Inspectors documented sanitation and equipment issues throughout the facility, including slow-draining kitchen hand sinks, inadequate dishwasher sanitizing temperatures, low chlorine sanitizer concentrations in the final dishwasher rinse cycle, and food residue buildup on soda gun holsters.
The inspection also found vacuum-sealed fish thawing without packages being opened to allow oxygen exposure, a practice inspectors said violates food safety requirements. The fish was removed from the packaging during the inspection.
Inspectors further cited the restaurant for expired ready-to-eat foods that exceeded seven-day date-marking requirements, unlabeled squeeze bottles, improperly stored knives, missing shellstock identification tags, and the failure to publicly post a valid Chester County Certified Food Manager certificate.
Separately, Spring City Community Pool Concession by FoamBoss in Spring City received multiple violations during an opening inspection on May 22.
Inspectors cited the concession facility for lacking sanitizer test strips, missing food thermometers, inadequate food safety knowledge by the person in charge, and incomplete cleaning and maintenance throughout the kitchen and sink areas.
The concession stand was also cited for missing paper towels at a handwashing sink, structural repair issues in the mop closet area, and the use of an unapproved hanging fly strip above food service windows.
The Health Department noted that inspection reports represent conditions observed at the time of inspection and may not reflect a facility’s long-term compliance status.
