PHILADELPHIA, PA — Insomnia Cookies is replacing smaller chips with larger chunks across six existing products, extending a format already used in its top-selling Chocolate Chunk cookie without increasing prices.
The Philadelphia-based bakery said the new pieces are about three times the size of the former chips and are being substituted one-for-one by weight. The change is intended to create larger pockets of melted chocolate or peanut butter without increasing the total amount used in each recipe.
The rollout covers Cookies ’N Cream, Confetti Deluxe, Chocolate Chunk Brownie, White Chocolate Chunk Macadamia, Peanut Butter Chunk and Peanut Butter Cup Deluxe.
The upgraded products are beginning to appear across Insomnia’s bakeries and digital ordering channels in the United States, Canada and the United Kingdom. Availability will vary during the transition, with the rollout expected to be complete by Oct. 1.
Insomnia said it spent about six months developing and testing the updated recipes, beginning in November 2025. The process included recipe development, operational testing and consumer sampling through its Tasting Tuesdays program.
“A warm cookie deserves big, melty pockets of chocolate, and that’s exactly what the chunks deliver,” Jessica Murgittroyd, a Cookievation consultant for Insomnia Cookies, said.
Certain recipes received minor formulation changes to accommodate the larger inclusions, while bake times and temperatures remain unchanged, according to the company.
The lineup uses semisweet chocolate chunks, white chocolate chunks and peanut butter chunks depending on the product.
Insomnia said more than 1.75 million customers have included a chunk-based cookie in their first identifiable purchase since 2023, a measure the company cited in expanding the format.
The bakery said the six-product update is part of a broader evolution of its cookie lineup, with additional changes expected to be disclosed in coming months.
