PHILADELPHIA, PA — Chef Jose Garces will introduce breakfast service at Buena Onda in Philadelphia’s Fairmount neighborhood on November 1, testing whether morning demand can support a permanent expansion of the restaurant’s operating hours.

The Baja-inspired taqueria will serve breakfast daily from 7 to 11 a.m. during a 60-day trial scheduled to run through the end of 2026. Customer demand will determine whether the service continues into 2027.

The expansion gives Buena Onda an additional opportunity to generate revenue from its existing location at 1901 Callowhill St., targeting neighborhood residents and commuters seeking convenient breakfast options.

Garces, a James Beard Award winner and Iron Chef, said the trial is intended to gauge whether the restaurant’s established menu concept can attract a morning customer base.

“We’re giving it 60 days and putting the decision in our guests’ hands,” Garces said. “If Fairmount wants breakfast, we’ll keep making it.”

The breakfast menu includes two taco varieties: bacon and jalapeño with scrambled eggs, Oaxaca cheese and scallions, and Mexican chorizo with scrambled eggs, salsa, avocado and crema.

An egg-and-cheese tacodilla will also be available, combining scrambled eggs and cheese in a flour tortilla.

The restaurant will offer two breakfast burritos. The Oaxaca version includes scrambled eggs, potatoes, avocado, Oaxaca cheese and salsa, while the California version combines eggs, potatoes, cheese and avocado.

A breakfast bowl features fried potatoes, two eggs, black beans, queso fresco, peppers, onions, avocado and salsa.

The beverage menu will include locally roasted Rival Bros drip coffee and cold brew, along with house-made sweeteners.

To encourage customers to try the new service, Buena Onda will offer a complimentary small Rival Bros drip coffee with any breakfast purchase during the first week.

Buena Onda opened in 2015 with a menu centered on Baja-inspired tacos, burritos and bowls. The breakfast trial extends that format into a new daypart without replacing the restaurant’s existing lunch and dinner operations.

Regular service will continue daily from 11 a.m. to 8 p.m., with happy hour from 4 to 6 p.m.

The breakfast program is scheduled to conclude at the end of December unless customer demand supports extending it.
