WEST CHESTER, PA — Chester County health inspectors cited food-handling, storage and sanitation violations at two establishments during inspections completed July 15, while six other food facilities were listed in compliance.
Rolling Stars LLC, located at 706 E. Market St., Suite 200, in West Chester, received citations involving cross-contamination risks, employee practices, food labeling and kitchen cleanliness.
An inspector found raw beef stored above cooked and ready-to-eat foods in a bain-marie, creating a potential contamination risk. The facility was directed to store raw animal products below cooked and ready-to-eat items.
A food employee was observed cracking a raw egg and then handling cooked fries and bacon without changing gloves. Inspectors directed management to train employees to remove and replace gloves when moving between raw and ready-to-eat foods.
Another employee was observed eating a french fry while working along the main food-preparation line. Food employees may not eat or drink while handling food or equipment, according to the inspection report.
Several portions of deli meats and cheeses stored in refrigerators lacked required date labels. Refrigerated foods requiring time and temperature controls and held for more than 24 hours must be marked with their preparation or opening date and used within seven days.
Inspectors also directed Rolling Stars to label squeeze bottles with the common names of their contents, clean or replace heat-damaged ceiling tiles, clean soiled ceiling vents and address floors and floor drains in the kitchen.
A complaint inspection at Signature Pizza LLC, located at 360 Commons Drive in Parkesburg, identified two violations involving time controls and date marking.
The restaurant was using time rather than temperature to control ready-to-eat foods without maintaining documentation showing when the food must be discarded. Inspectors ordered an immediate correction and directed the business to retain the records for 30 days.
Commercially processed and on-site prepared foods held for more than 24 hours also lacked dates showing when they were opened or prepared.

- Grid Iron Sports Bar & Pizzeria, 934 Township Line Road, Phoenixville
- Gryphon Cafe, 111 W. Gay St., West Chester
- La Jalisciense Grocery Store, 1490 Baltimore Pike, Toughkenamon
- Malvern Food LLC, 490 Lancaster Ave., Suite 9, Malvern
- Stampede Barbecue, 1205 Pottstown Pike, Glenmoore
- United Downingtown, 299 W. Uwchlan Ave., Downingtown
The Health Department cautions that inspection reports reflect conditions at a facility at the date and time of the visit and may not represent its long-term sanitation or food-safety record.
