WEST CHESTER, PA — A change-of-owner inspection at a Malvern food facility uncovered multiple food safety violations, including improper cold holding, unsanitary food-contact surfaces and plumbing deficiencies, according to the Chester County Health Department’s latest restaurant inspection reports.
The July 30 inspection of Hemsley House of Paoli/Food, 324 Lancaster Ave., documented violations requiring immediate corrective action after inspectors found refrigeration units holding food above the required 41 degrees Fahrenheit.
Inspectors reported a reach-in cooler in a satellite kitchen operating at 51 degrees and a bain marie unit holding food between 50 and 55 degrees. Dairy products and prepared foods were voluntarily discarded, and the health department directed the facility not to use the equipment until it is repaired and maintains proper temperatures.
The report also cited food debris on a tabletop can opener blade and unclean food preparation surfaces throughout the kitchen. Inspectors ordered the facility to clean and sanitize equipment and replace malfunctioning thermometers in several refrigeration units.
Additional violations included employees storing personal drinks and belongings in food preparation areas, wiping cloths left outside sanitizer solution, an ice cream dipper well with standing water, inaccessible or improperly supplied handwashing sinks, plumbing leaks beneath sinks, missing handwashing reminder signs and paper towels, and floors and shelving requiring cleaning.
The health department also cited the facility for using a handwashing sink to dispose of food waste and for storing food and personal items improperly.
Elsewhere, Evergreen Coffee Co., 102 Wallace Ave., Downingtown, received violations during a routine inspection. Inspectors cited the café for lacking an adequate air gap on a prep sink, storing uncovered tea, holding butter above the required refrigeration temperature, failing to label some food containers, maintaining sanitizer below the required concentration, and operating an ice machine with food residue.
The report also noted the absence of a required consumer advisory for menu items containing raw or undercooked eggs, improper use of a handwashing sink and a broken paper towel dispenser in the restroom.
A follow-up inspection at Han Dynasty, 260 N. Pottstown Pike, Suite 68, Exton, found remaining violations involving unclean non-food-contact surfaces, missing handwashing signage, worn food storage equipment and the absence of a Chester County-certified food manager.
