AVONDALE, PA — Caputo & Guest is expanding into refrigerated prepared meals with a line of ready-to-sear specialty mushroom entrées, seeking to capture consumer spending on convenient, plant-based foods while creating a new retail market for mushrooms cultivated in Chester County.

The company introduced four sous vide products at the Global Produce & Floral Show in Orlando, Florida, combining organic specialty mushrooms with seasonings and precooking to reduce preparation time.

The Sous Vide Entrées line includes Spanish Style Plant-Based Scallops, Lemon Garlic Plant-Based Scallops, Yellow Curry Lion’s Mane Chick’n Breast and Savory Umami Lion’s Mane Steak.

The products are designed for supermarket refrigerated cases, with an 8-ounce package carrying a suggested retail price of $8.99. A 16-ounce club-store package containing two portions is priced at $12.49.

The launch moves Caputo & Guest beyond fresh specialty mushrooms into prepared foods, where convenience and familiarity can influence purchasing decisions.

According to the International Food Information Council’s 2026 Food & Health Survey, 88% of Americans identify taste as a factor in food purchases, while 61% cite convenience.

Caputo & Guest’s own consumer research found that shoppers sometimes struggle to locate specialty mushrooms or determine how to prepare them.

“Consumers are looking for more real, plant-forward meal options, but they still want satisfying texture, familiar flavors and weeknight convenience,” said Jim Garsow, the company’s chief marketing officer.

The new products use King Oyster and Lion’s Mane mushrooms to replicate textures associated with conventional meat and seafood dishes.

King Oyster mushrooms provide the firm texture used in the scallop-style products, while Lion’s Mane mushrooms are used in the chicken- and steak-inspired varieties.

Each product is seasoned and cooked using the sous vide method, which applies controlled temperatures to retain moisture and texture. Consumers finish preparation by searing the mushrooms before serving.

The company is targeting vegetarians, consumers following plant-based diets and shoppers who occasionally substitute vegetables for meat.

For supermarkets, the products create additional merchandising opportunities alongside refrigerated plant-based foods, fresh vegetables and meal accompaniments such as rice and pasta.

The entrées are certified plant-based, non-GMO, kosher and gluten-free. They contain no artificial flavors, colors or preservatives.

Caputo & Guest cultivates specialty mushrooms in Kennett Square using a proprietary growing medium made from organic oak or poplar sawdust and grains rather than manure compost.

Its domestic operations encompass growing-medium preparation, cultivation, harvesting, cutting and packaging.

The prepared-food expansion builds on those operations by moving the company’s mushrooms into a higher-value product category that combines agricultural production with food processing and retail convenience.
