ST PETERS, PA — A Chester County Health Department follow-up inspection of St. Peter’s Bakery LLC on Aug. 12 found rodent droppings, ineffective sanitizing solution, and several other food-safety violations, while five other establishments listed in the county’s inspection report were in compliance.
An environmental health specialist observed rodent droppings under and behind equipment at St. Peter’s Bakery, 3441 St. Peter’s Road, according to the inspection report. The bakery was directed to remove the droppings and contact its pest-control service if they return.
The inspector also found that the quaternary ammonium concentration in the sanitizing solution at the three-bay warewashing sink was undetectable rather than the manufacturer-directed concentration of 200 to 400 parts per million. No sanitizer was being supplied to the sink, and the facility was instructed to sanitize dishes in its dish machine until additional sanitizer arrived.
The bakery was using time rather than temperature to control certain ready-to-eat foods requiring time and temperature controls for safety, but did not have written procedures or documentation verifying when food would be discarded. The Health Department indicated it would provide a sample policy.
Other violations involved loose rubber door gaskets on an ice cream dip box, reuse of fish trays intended for single use, and deteriorated floor grout.
The bakery was instructed to clean the dip-box gaskets immediately and replace them by Aug. 19. Inspectors also directed the facility to discard the reused fish trays and obtain commercial-grade food containers.
Worn tile-floor grout must be replaced by July 1, 2027, according to the report.
Five establishments were listed as in compliance:
- Birchrunville Café in Birchrunville;
- Excursion Ciders in Phoenixville;
- Lenape Pizza in West Chester;
- Radley Run Country Club in West Chester; and
- Starbucks Coffee #7833/Birmingham in West Chester.
The Health Department cautions that inspections represent conditions observed at a particular date and time and may not reflect an establishment’s long-term sanitation or food-safety status.
