EXTON, PA — Hankin Group announced that L’Olivo Trattoria, a new Northern Italian-inspired restaurant led by Chef Francis Pascal, will open at Eagleview Town Center on October 2, 2025.
The 3,500-square-foot restaurant at 570 Wellington Square will seat up to 90 guests across a modern dining room, bar, and outdoor patio. The menu will showcase traditional dishes from Emilia-Romagna, Tuscany, Naples, and Sicily, blending Italian flavors with French influence. Offerings will include rotolo with ricotta and spinach truffle fondue, black ink linguini carbonara, Barolo braised beef, and veal chop Milanese.
Pascal, who also operates The Birchrunville Store Cafe and Butterscotch Pastry Shop in Chester County, described the restaurant as a personal tribute to his culinary heritage. “Raised in France with an Italian mother, I spent countless hours in kitchens throughout Perugia and Florence crafting traditional pasta dishes with family. Those meaningful moments around the table, filled with conversation and connection, inspire everything we’ll create at L’Olivo,” he said.

The opening strengthens Eagleview’s reputation as a dining destination, joining Restaurant Row establishments such as Al Pastor, Bluefin, and Brickside Grille. The 800-acre mixed-use community integrates residential, commercial, and retail spaces with extensive greenways and walkable design, drawing residents and visitors across Chester County.
