PHILADELPHIA, PA — A craft-driven pizza concept rooted in old-school workmanship is set to ring in the new year at Schuylkill Yards, as Assembly Pizza Co. prepares to open January 1, becoming one of Philadelphia’s first restaurant debuts of 2026 and completing the six-vendor lineup at Gather Food Hall.
The opening marks a milestone for the 13,000-square-foot food hall inside the historic Bulletin Building at 3025 Market Street, which has steadily built a curated roster of culinary offerings in University City. With Assembly Pizza Co. joining the mix, Gather officials say the destination’s original vision is now fully realized.
Assembly Pizza Co. is led by hospitality professional Caleb Walcott, who describes the concept as a modern expression of craftsmanship, precision, and intentional design. The restaurant’s name reflects Walcott’s upbringing in a family of makers — metalworkers, woodworkers, and furniture builders — where quality and technique were central values.
“I am thrilled to be opening Assembly Pizza Co. in Philadelphia, and especially here at Gather Food Hall, where our concept is in the company of so many talented and unique culinary offerings,” Walcott said. “This is a city built by makers and doers, and Assembly reflects that same spirit, with our quality-focused ingredients and attention to detail.”
At the center of the menu is a signature pizza dough made from a blend of premium Pacific Northwest flour and high-grade Italian flour, fermented to develop depth, balance, and character. The result, according to the company, is a pizza designed to deliver a familiar feel while elevating texture and flavor through careful technique.
In addition to classic and rotating pizzas, the menu will feature comfort-forward items such as Assembly Fries, Italian chopped salad, mozzarella sticks, a chicken parmesan sandwich, and house-made sauces. The lineup will also include gelato produced locally by Cocco’s Gelato.
Assembly Pizza Co. joins an eclectic group of Gather Food Hall vendors that includes Federal Donuts & Chicken, Mucho Perú, Sahbyy Food, El Mictlan, and Bowl’d Masala. The space is anchored by the Bulletin Bar, a full-service bar offering handcrafted cocktails, draft beer, and wine. Gather Food Hall was developed by Hospitality HQ in partnership with Brandywine Realty Trust as part of the broader Schuylkill Yards development.
Beyond dining, Gather has positioned itself as a hub for social impact, partnering with Believe in Students to address food insecurity among Philadelphia’s college population. With one in four college students experiencing food insecurity nationwide, the program provides low-cost, stigma-free meals while connecting students to additional support services. Brandywine Realty Trust has committed $250,000 over ten years to the initiative, and Gather expects to provide 5,000 meals in its first year through the nonprofit’s network of college and community partners.
Gather Food Hall is open Sunday through Thursday from 11:00 AM to 10:00 PM, and Friday and Saturday from 11:00 AM to 11:00 PM. Federal Donuts opens daily at 8:00 AM.
