Health Inspectors Flag Violations at Kennett Square Bistro

Food Safety Inspections

WEST CHESTER, PA — A follow-up inspection by the Chester County Health Department identified multiple food safety violations at a Kennett Square restaurant, including improper raw meat storage and malfunctioning dishwashing equipment.

Inspectors visited Floga Bistro, 826 East Baltimore Pike, on February 10 as part of a follow-up review. The report reflects conditions observed at the time of the inspection and serves as a snapshot of compliance on that date.

According to the inspection report, a sheet tray of raw chicken parmesan was found stored above deli meats inside a walk-in refrigerator. Health officials noted that all raw meats must be stored below ready-to-eat foods to prevent cross-contamination. The items were relocated on site during the inspection.

Inspectors also cited ongoing issues with the facility’s mechanical dishmachine. The low-temperature, chemical sanitizing unit was recorded at wash: 135 degrees Fahrenheit; rinse: 156 degrees Fahrenheit; and chlorine concentration: 0 parts per million. Officials stated the unit must operate in accordance with the manufacturer’s specifications. A repair company was contacted and expected on site within 24 hours. In the meantime, staff were instructed to handwash all dishes in the three-compartment sink and to use sanitizer test strips daily to monitor chemical concentrations. The report warns that future inspections revealing improper sanitizer levels may require the facility to maintain a daily sanitizer log on site.

Additional violations involved sanitizer buckets in the kitchen. Inspectors observed green and red buckets containing chlorine sanitizer at concentrations exceeding 100 parts per million, and noted that the green buckets were labeled “detergent.” The sanitizer solution was remixed on site to achieve proper concentration, and the facility was directed to label all buckets according to their contents.

The Health Department emphasizes that inspection reports reflect conditions observed at the time of the visit and may not represent the long-term sanitation status of an establishment.
